Bon Vivants

Leeks were part of our CSA box Tuesday. Having never explored leeks myself I asked the kids what I should create with them. Joe, my Europe-traveling son, immediately said, "Vichyssoise, of course."

A little research.

Ingredients gathered.

Leeks softened in butter. Garlic added.

Potatoes, broth, softened leeks, thirty minutes simmering.

Blenderized and voila! Vichyssoise garnished with freshly snipped chives from the garden.

Heated crusty bread and we are feeling our French roots today!

Bon appetit!

Lovely! This was the soup I made for my sister's wedding, only I was not so sophisticated, and just called it potato-leek.

Yum!

Nice! I use that brand of broth sometimes, too, when I don't have any homemade on hand. It's pretty good.

BTW, I made potato leek soup at work last week and it was delish!

ME, it's sure good! I've never had it before. I suppose it's a 'poor man's soup'. If that's the case, glad I'm poor!! Yum!

WC, yeah, I use the boxed broth when I'm too lazy to go thaw out my own home stock or if I'm out of it. It's pretty good, yeah. And you made this soup at work - must be the season, eh.

Sandy, I've got two more leeks now. I sense more of this soup in my future... ;)

Tshs: We wanted to, but we were hungry. Couldn't wait. Maybe next time??

Gardenia: Would love to share it with you!

Robin: I love your artwork!! Hope my food photos don't cause a midnight snack that keeps you up at night. ;) It can happen...
